Leonardi Saba Dressing
A sweet, thick and wonderful dressing! Leonardi Saba is produced in an 18th century farmhouse & production facility by the Leonardi family. The farmhouse is surrounded by 10 hectares of Trebbiano and Lambrusco vineyards, which are still harvested by hand to this day.
The grapes are harvested in September and October, when they are at their peak condition. The must is cooked within 24 hours in stainless steel boilers for 36 - 48 hours until the juice reaches a concentration of 50%. The must is then decanted and transferred to wood barrels of different sizes over time, each a different type of wood (oak, ash, juniper, cherry, mulberry, & chestnut) and is full for 75% of its capacity. This allows the balsamic to take on flavors and aromas of each different wood to create a complex, sweet, syrupy condiment that is perfect not only on salads, fruit salads and veggies but also on risottos, soups, meat, and fish.
This Saba has great fruity overtones, loaded with luscious grape, raisin, plum and berry notes. This is a dressing, and not a balsamic vinegar. It is thicker, sweeter and less acidic than its balsamic counterpart.
